Chipotle Dip


Serves 4-6

1 – 16 ounce can chickpeas, drained and rinsed

2 tablespoons tahini

½ chipotle pepper

2 tablespoons lime juice

1 – 2 garlic cloves

2 tablespoons olive extra virgin olive oil

salt and pepper to taste

Parsley or cilantro for garnish

Paprika for garnish

Pita chips

Place chickpeas, tahini, chipotle pepper, lime juice, and garlic in the bowl of a food processor and process until smooth. Drizzle in olive oil and add salt and pepper to taste. Place in a serving bowl and garnish with parsley and paprika. Serve with pita chips.
