This is my dad's favorite fudge and my mom who didn't love to bake would make it because it is so simple. I don't where the recipe is from other than written on an index card in my mom's recipe book.
Makes 1 9X9 pan
2 sticks butter, cut up into small pieces
1 cup peanut butter
1 teaspoon salt
1 tablespoon vanilla extract
4 cups confectioners sugar
Combine butter, peanut butter, and salt in a medium saucepan and melt together over medium-low heat.
Remove from heat and stir in vanilla extract.
Add in confectioners sugar and mix until completely combined.
Add fudge to the 9X9 pan and using your palms or the back of a glass, press the mixture into the pan until smooth and even.
Allow to set up, at least 2 hours, before cutting into 1-inch squares.
