Makes 1 dozen
1 ½ cups all-purpose flour
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter, room temperature
1/2 cup granulated sugar
1/4 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1 cup chopped candy of your choice
Heat the oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy, about 2 minutes.
Beat in the egg and vanilla extract until well combined.
Gradually add the dry ingredients to the butter mixture, mixing just until incorporated.
Fold in the candy.
Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches between each.
Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
