Leftover Candy Cookie

Makes 1 dozen


  • 1 ½ cups all-purpose flour

  • 1/2 tsp baking powder

  • 1/4 tsp baking soda

  • 1/2 tsp salt

  • 1/2 cup unsalted butter, room temperature

  • 1/2 cup granulated sugar

  • 1/4 cup brown sugar, packed

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1 cup chopped candy of your choice



Heat the oven to 350°F.  Line a baking sheet with parchment paper or a silicone baking mat.

  1. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. 

  2. In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy, about 2 minutes.

  3. Beat in the egg and vanilla extract until well combined.

  4. Gradually add the dry ingredients to the butter mixture, mixing just until incorporated.

  5. Fold in the candy. 

  6. Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches between each.

  7. Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set.

  8. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
