Cherry Jam

Makes 2 pints

3 pounds cherries, stemmed, pitted, and coarsely chopped

3 cups granulated sugar

¼ cup lemon juice

Zest of 2 lemons

Combine all of the ingredients except the zest in a large saucepan. Bring to a boil; reduce heat to low and simmer, stirring frequently until thickened about 20 minutes.

Remove from heat, pour into jars, and refrigerate for up to 3 weeks or freeze for longer-term storage.
