LEMON VERBENA SORBET
Yield: Makes about 1 pint
2 cups water
1 cup sugar
Juice and zest from 2 fresh lemons
2 sprigs mint, lemon verbena or lemon thyme
¼ cup gin, optional
Combine the water, sugar, lemon juice, zest, and herbs in a saucepan, boil, cover, and simmer for 10 minutes.
Remove from the heat and let it cool. Strain. Stir in gin, if using.
Freeze in an ice cream machine according to manufactures instructions.
