Roasted Kale & Chickpeas

I love roasting kale and chickpeas together - and its eay to do so. They can be added at the same time on the same tray and you dot need to worry about the kale burning.


1 - 15 ounce can chickpeas, drained and rinsed

1 tablespoon olive  oil

2 teaspoons turmeric 

1 teaspoon cumin

1 teaspoon coriander

1 teaspoon salt

½ teaspoon black pepper

¼ teaspoon cayenne pepper

1 bunch kale, torn into 3 inch pieces


Preheat the oven to 375°F 

On a sheet tray, toss all ingredients together. Place in the oven and cook for about 30 minutes or until the chickpeas are lightly toasted and crisp and the kale is just beginning to brown on the edges.
